Aloo Kabli

(Tangy potato street food of Kolkata, India- gluten-free, vegan)

This is that one food that makes me pure nostalgic. There is no school in Calcutta without aloo kabli vendors outside the gates. From apology to sweet romance, aloo kabli was the go-to food for every occasion.

From saying maa not to pack tiffin because there was a planned aloo kabli picnic to getting scolded for overeating aloo kabli. There are tons and tons of stories surrounding aloo kabli. So, here I present a recipe from the archives of my childhood that will always be fresh in my mind regardless of where and how old I am.

What is Aloo kabli?

Aloo kabli is a fusion of hot, spicy, and sour-flavored potatoes mostly found in the streets of Calcutta. This quick and simple street food is the ideal snack for all your kitten parties, birthday parties, potlucks, etc.

Aloo kabli is delicious and nutritious. Chickpea, potato, cucumber, whole yellow pea, onion, and other components are abundant. These are mixed with a handmade spice blend, chaat masala, lemon juice, tamarind pulp, chili flakes, and tamarind pulp.

It works well as a teatime snack, in my opinion. However, you can have it at any time of day. Simply keep everything prepared in the refrigerator. Mix everything together and eat whenever you are hungry! Please try this dish if you enjoy street food as much as I do.

This potato chaat is liked by people of all ages. Let’s get ready to rustle up a fresh aloo chaat.

Potatoes – Potato is the hero ingredient of this recipe. Use golden potatoes for this recipe and not sweet potatoes.

Veggies – You will need onions, cucumber, and tomatoes in this recipe.

Black Chickpeas, Matar & Peas – The black chickpeas, matar, and peas add a nice bite to this all-potato dish.

Tamarind Chutney – You can use either homemade or store-bought tamarind chutney, as per your convenience.

Lime Juice – The lime juice adds a strong tanginess that makes this dish everyone’s favorite.

Fresh Coriander – This is a must. Fresh coriander gives the dish a refreshing flavor.

For making the roasted masala at home, you will need 2 tablespoons each of cumin, coriander, and 4 dried red chilies. All ingredients should be dry-roasted, cooled, and ground into a powder. That’s it, this masala will make your aloo kabli beyond the world delicious.

Sev – You can garnish it with sev for additional taste.

Rock salt – I always use rock salt for aloo kabli. Just a preference.

How To Prepare Aloo Kabli?

To prepare aloo kabli, diced boiled potatoes, chopped onions, tomatoes, cucumber, boiled kala chickpeas, boiled white peas (matar), salt, roasted masala, lime juice,, and tamarind chutney should all be combined in a bowl.

Toss all the ingredients very well so that the tamarind chutney coats everything evenly.

Serve it with sev and fresh coriander on top in individual bowls.

Some Expert Tips For Preparing Aloo Kabli

  • The number of green chilies can be adjusted to your preference.
  • You can also adjust the sourness as per your choice. If you are not a fan of too much tanginess, you can reduce the quantity of tamarind chutney and lime juice.
