Beetroot mango mint salad is a nutrient-dense summer salad that will make you feel like you’re in the middle of summer! The flavors of mango and beetroot in this salad pop more and work delightfully together when dressed with salt, pepper powder, and fresh mint! The mint’s freshness contrasts with the earthiness of the beetroot. It’s easy to make, flavorful, and high in vitamins, minerals, antioxidants, fiber, and omega-3 fatty acids.

What are the benefits of beetroot and mango?

Beets are high in nutrients and have several health-promoting characteristics. They can aid your brain, heart, and digestive system, supplement a balanced diet, increase athletic performance, reduce inflammation, and perhaps delay cancer cell growth.

Similarly, mangoes are high in magnesium and potassium, both of which are associated with decreased blood pressure and a regular pulse. Furthermore, mangos contain a chemical known as mangiferin, which preliminary research suggests may be able to lower cardiac inflammation. Mangoes also help to keep your digestive system in check.

So, we must include such superfoods in our diet almost daily, and this recipe is one easy and tasty way of incorporating them into your diet.

How To Prepare Beetroot Mango Mint Salad?

First, boil the beet until it is just cooked through but still firm. You can pressure cook it for 1 whistle, then reduce it to low heat and simmer for another 7-8 minutes. Alternatively, you can cook the whole beet for around 30 minutes uncovered. Peel the skin from the beet and chop it into small pieces.

Also, cut the mango into small cubes.

Now, place the cubed beets, mangoes, and mint leaves in a large mixing bowl (you can add the mint leaves whole or chopped).

Now season with rock salt (or regular salt) and pepper. Combine thoroughly. Refrigerate the salad to allow it to chill.

On a hot sunny day, enjoy this chilled beet-mango-mint salad.
