DESCRIPTION

Bengali Aloo Dum is very tasty recipe and does not require too many ingredients to prepare it. It is super delicious and it is a very flavorful recipe.

INGREDIENTS

  • 5 to 6 potatoes – medium size, you can use baby potatoes as well
  • 6 Tomatoes – finely chopped
  • 1 tsp Ginger paste
  • 2 Green chilies – slit length wise
  • ½ tsp Turmeric Powder
  • ½ tsp Chili Powder
  • 1 tsp Jeera Powder
  • 1 tsp Bengali Garam Masala (Bengali garam masala contains cardamom, cloves and cinnamon in equal quantities, grind them all together in a coffee grinder to a fine powder)
  • ½ cup Green peas (optional)
  • 2 Bay leaves
  • 1 inch Cinnamon piece
  • 4 Cloves
  • 1 tsp Jaggery
  • 1 tsp Salt
  • 2 tbsp Mustard oil (you can use refined oil as well)
  • 1 tbsp Ghee

INSTRUCTIONS

  1. Wash and clean the potatoes very well and cut them into halves.
  2. Boil them in a pressure cooker with a cup of water.
  3. Place the pressure cooker on high heat, after one whistle reduce the heat and cook for 5 to 7 minutes.
  4. Open the pressure cooker once the pressure is released. Take out the potatoes and do not peel them as new potatoes taste better with the skin on. Coat the potatoes with ½ tsp of salt, this allows better absorption of salt and keep them aside.
  5. Heat a kadai add oil. Once the oil heats up add bay leaves, cinnamon and cloves.
  6. As they start spluttering add tomatoes and saute them for 3 minutes.
  7. Now add ginger paste, salt, turmeric powder and chili powder.
  8. Saute on medium heat for 6 to 7 minutes till the water from the tomatoes dries up.
  9. Now add the Bengali garam masala and jaggery and mix well.
  10. Now add the boiled potatoes and give it a good toss.
  11. Add green peas and half a cup of water.
  12. Cover and cook on medium heat for 4 to 5 minutes.
  13. Drizzle some ghee.
  14. Mix everything well and garnish with some fresh coriander.
  15. The Aloo Dum will have a thick gravy so it can be enjoyed with poori, paratha or roti.
