Ingredients
- 1 ripe mango diced into cubes
- 1 medium size red bell pepper diced into cubes (you can use any bell pepper of your choice or a combo).
- 1/2 purple onion, chopped
- 1 tablespoon lemon juice
- 1 tablespoon roasted masala (see in notes)
- 1 green chili finely chopped
- ½ cup coriander leaves finely chopped
- ½ teaspoon salt
- 1 teaspoon sugar, honey or monk fruit sugar ( non-caloric)

To make the roasted masala: dry roast the cumin, coriander and optional dried red chili, cool, mix and grind together. Store in a glass or metal jar.
It’s a good idea to make a larger quantity of this roasted spice mix. Add equal amount of cumin and coriander and however many dried red chilies you’d like.
Sugar is fully optional, depending on how ripe and sweet your mango is you may not need any.
