Whenever I think about light and protein reach breakfast, the very first dish that strikes me is moong sprouts salad, commonly known as Sprouted Moong Salad. This Sprouts Salad dish is quick and easy to make, as well as vegan, gluten-free, and low in fat. Lime juice: Moong sprout salad is mostly like when tangy. Hence, lemon is an essential ingredient, in my opinion. Adjust the quantity based on your taste buds.

Spices: Add 1 teaspoon of chaat masala for the street-style chatpata flavor and ½ teaspoon of pepper powder (optional).

Salt: Chaat masala has salt in it, so I always add less salt; one can increase or decrease the quantity depending on the taste.

How to prepare sprouts?

Rinse and soak the full green moong bean in clean water for at least 8 hours or overnight to sprout.

Drain the water and place the drained moong beans in a basin, cover with plastic wrap or cloth and set away in a warm area for a day or two.

You’ll notice them sprouting. If you want longer sprouts, leave them for one additional day (spray some water on the sprouts to keep them from drying out).

Sprouts can be used in salads and curries. In an airtight container, sprouts can be refrigerated for up to 3 to 4 days.

How to prepare moong sprout salad?

Wash the sprouts under running water and place them in a strainer to allow all of the water to drain.

Add the sprouts to a large mixing dish and toss to combine cooked potatoes, tomatoes, finely chopped green chilies, salt, chaat masala, pepper powder, lime juice, peanuts, finely chopped green coriander.

Toss everything together thoroughly so that all of the ingredients are well combined. Then, serve right away and enjoy your guilt-free.

Description

Ingredients

  • 1 cup Green mung sprouts
  • 1 Tomato – medium size, finely chopped
  • 2 Potato – medium size, boiled peeled and cut into 2 cm cubes
  • 1 Onion – small, finely chopped (you can add more if you like the flavor of raw onions)
  • 2 Green chilies – finely chopped
  • ¼ cup Coriander leaves – finely chopped
  • ¼ cup Peanuts – roasted
  • 1 teaspoon Lime juice
  • 1 teaspoon Chaat masala
  • ½ teaspoon Pepper powder (optional)
  • ½ teaspoon Salt

Instructions

  1. Wash the sprouts under running water and keep it in a strainer so that all the water drains out.
  2. Transfer the sprouts to a large mixing bowl, add boiled potatoes, tomatoes, finely chopped green chilies, salt, chaat masala, pepper powder, lime juice, peanuts and finely chopped green coriander.
  3. Toss them all very well so that all the ingredients mix well.
  4. Serve it immediately and enjoy your guilt free sprouts salad.

Notes

Chaat masala has salt in it so add less salt in the beginning. You can increase or decrease the quantity depending on your taste.
