My love for kebabs and mushrooms has made me come up with this recipe. This dish is a meatless, vegan version of “kebab”. Yes, you read that correctly. If you are a kebab fan like me but a vegetarian, you must try out this recipe.
What are Mushroom Kebabs?
Mushroom Kebabs is a mouth-watering North Indian dish made with mushrooms, capsicums, and spices. This vegetarian appetizer is a quick to prepare and nutritious addition to any dinner. Serve this delectable snack to game nights, buffets, and kitty parties, and bring it to potlucks. Serve these kebabs with your choice of mint chutney, tomato ketchup, or cilantro chutney.
Notable Ingredients at a Glance

Button Mushroom: I have used button mushrooms because it’s easy to grill. You can use more meaty mushrooms like portobello or oyster mushrooms. Many other gourmet varieties of Mushrooms will work fine with this recipe.
Bell pepper: Use all the colors of bell peppers. Red, Green, and Yellow. It will make your kebab colorful. Then, cut them into cubes for grilling.
Onion: Take large onions and cut them into squares. The small onions will give smaller squares; hence always take large onions.
Spices: Mixed herb seasoning, red chili powder, and chaat masala are the spices you will need to prepare this kebab. You will get all of these in an Indian grocery store.
Oil: Very less oil is required in this recipe because it is made by grilling. You can use any kind of neutral oil, vegetable oil, olive oil, or any other oil.
Lemon juice: Lemon juice will add acidity and freshness to the dish.
Use chopped coriander for garnishing.
How to prepare Mushroom Kebabs?
Keep button mushrooms aside after washing them under running water. Then, on a chopping board, slice the onions and bell peppers.
In a mixing bowl, add the mushroom, bell peppers, onions, mixed herb seasoning, red chili powder, salt & vegetable oil. Mix all of them thoroughly and marinate them for 15-20 minutes.
Next, alternately skewer the mushrooms, onions, and bell peppers. Place the skewers on a grill with a medium flame and cook for 10-15 minutes on low heat.
Turn off the grill and continue to baste the kebabs with butter. Season the kebabs with salt and chaat masala and place them on a dish. Serve garnished with onion slices and chopped coriander.
Some expert tips for preparing Mushroom Kebabs
- Always use button mushrooms as they are easy to grill. Other mushrooms are not suitable for skewers.
- You can also use carrots and zucchini in this recipe.
- If you do not have a grill, you can also make them in air fryers. Though the taste won’t be the same, it will be somewhat close.

Ingredients
- 1 cup Button Mushroom – cut in halves
- ¼ cup Red bell pepper – cut in cubes
- ¼ cup Green bell pepper – cut in cubes
- ¼ cup Yellow bell pepper – cut in cubes
- ¼ cup Onion – cut in squares
- 2 tablespoon Mixed herb seasoning
- 1 tablespoon Vegetable oil
- 1 tablespoon Lemon juice
- 1 tablespoon Salt
- 1 teaspoon Red chili powder
- ½ teaspoon Chaat masala
- Chopped coriander for garnishing
Instructions
- Take a large mixing bowl and add the mushrooms, bell peppers and onions.
- Add mixed herb seasoning, red chilli powder, salt & vegetable oil. Marinade for 15 mins.
- Add the marinated mushrooms and veggies in a skewer.
- Grill it for 5-6 minutes.
- Sprinkle some chaat masala.
- Garnish with chopped coriander and enjoy it hot.
