Description
Rose barfi is a sweet, fudge-like dessert that is bursting with the unique aroma and flavors of rose.
Ingredients

- 1 cup whole + 2 tsp chopped raw cashews
- 1 cup powdered sugar
- 2 tbsp milk powder
- 1 tsp ghee
- ¼ tsp cardamom powder
- 4 or 5 drops red gel food color
- 1 teaspoon rose syrup (Rooh Afza brand)
- 4 tablespoons chopped pistachio
- 10–12 dried rose petals
Instructions
- Grind cashews into a fine powder, and chop a few cashews.
- In a big pan, add water and sugar and stir carefully until the sugar is dissolved. Boil for 5 minutes until a thick syrup is formed, or until it reaches one-string consistency.
- Add ground cashew, milk powder, cardamom powder, rose syrup, and ghee to the sugar syrup. Thoroughly mix all ingredients.
- Add the chopped cashew and food color (if desired) and keep stirring until the mixture thickens.
- Line a tray with parchment paper and grease it with ghee. Pour the mixture into the tray and spread it evenly. Garnish with chopped pistachios and dried rose petals.
- Place in the refrigerator and cool for 60 minutes.
- Cut the mixture into small squares or diamond shapes ( this is called barfi)
- Your delicious rose barfi is now ready to be served and enjoyed!
Notes
You can keep this in the fridge for 3-4 days and it freezes well too.
Adjust the rose syrup and sugar to your taste as the rose syrup is also sweetened.
