Inrresistible Rose Barfi

Rose barfi is a sweet, fudge-like dessert that is bursting with the unique aroma and flavors of rose.


  1. 1 cup whole + 2 tsp chopped raw cashews
  2. 1 cup powdered sugar
  3. 2 tbsp milk powder
  4. 1 tsp ghee
  5. ¼ tsp cardamom powder
  6. 4 or 5 drops red gel food color
  7. 1 teaspoon rose syrup (Rooh Afza brand)
  8. 4 tablespoons chopped pistachio
  9. 1012 dried rose petals


  1. Grind cashews into a fine powder, and chop a few cashews.
  2. In a big pan, add water and sugar and stir carefully until the sugar is dissolved. Boil for 5 minutes until a thick syrup is formed, or until it reaches one-string consistency.
  3. Add ground cashew, milk powder, cardamom powder, rose syrup, and ghee to the sugar syrup. Thoroughly mix all ingredients.
  4. Add the chopped cashew and food color (if desired) and keep stirring until the mixture thickens.
  5. Line a tray with parchment paper and grease it with ghee. Pour the mixture into the tray and spread it evenly. Garnish with chopped pistachios and dried rose petals.
  6. Place in the refrigerator and cool for 60 minutes.
  7. Cut the mixture into small squares or diamond shapes ( this is called barfi)
  8. Your delicious rose barfi is now ready to be served and enjoyed!


You can keep this in the fridge for 3-4 days and it freezes well too.

Adjust the rose syrup and sugar to your taste as the rose syrup is also sweetened.
