You can’t take your eyes off TikTok for more than a minute without seeing a new recipe, housekeeping technique, or travel advice become viral. The new hot thing this morning is a recipe for a sun omelette, which employs sliced tomatoes as a mould for scrambled eggs, cheese, and herbs.

What is a Sun Omelette?

Sun Omelette Is definitely one of those dishes that looks amazing on social media. The colour contrast between the ripe red tomatoes and bright yellow egg yolks stand out among the thousands of other food related videos being posted to these sites every minute. As a very basic description, a Sun Omelette uses a slice of tomato as a mould to shape the egg  and cheese mixture that you put in it. The end result is a beautiful colourful omelette that has a tangy taste due to the tomato surrounding it. And looks gourmet enough to be served at a restaurant even though it’s very simple and easy to make.

Notable Ingredients at a Glance

Eggs – Standard eggs will do the trick. No need to go fancy on the eggs. Try to use fresh eggs for this recipe. They tend to have a deeper richer color in the yolk.

Tomato – The bigger the slice of tomato, the bigger your omelet will be. Therefore, choose a larger-sized tomato that is firm on the outside. That firmness is going to prevent the tomato from disintegrating in the pan while cooking.

Spring Onions – 2 tablespoons of chopped spring onions would add texture to the omelet.

Black Pepper Powder – 1 teaspoon for seasoning the omelet. It adds the classic smell and taste of a well-made omelet.

Salt – 1 teaspoon or add according to your taste. The final result of the omelet should taste as salty as salted butter.

Oil – 2 tablespoons of oil will do. This oil amount is assuming you’re using a non-stick frying pan. If you are using a cast-iron frying pan then increase the oil amount slightly and use a well seasoned frying pan.

How to prepare the Sun Omelette?

Cut the tomato into rings. You need to remove the portion that is inside the ring. Get rid of all the seeds and the watery part of the tomato.

Mix the eggs, spring onions, salt, and black pepper powder in a bowl. This is the omelet mix. You can add any complementary spice mix here to create many different tastes.

Heat oil in a non-stick pan. If you do not have a non-stick pan handy, then increase the amount of oil in the pan to prevent any sticking.

Place the tomato rings and pour the omelet mix into it with a spoon. You need to do this slowly little by little. Pouring a lot of mixtures all at once would make the tomato rings float on the omelet mix, defeating the purpose of the rings. In this case, timing is key. If you wait too long to add the omelet mix, the bottom might burn. So be prepared for some trial and error in this process of figuring out the sweet spot for getting the perfect omelets.

As soon as you’ve filled up to the top of the tomato rings and the eggs are semi-cooked, you need to flip them.

Cook both the sides for 3 min each.
