Barfi with Indian Tricolors

To those not from India, January 26 is Indian Republic Day, and August 15 is India’s Independence Day. Indian tri-color flag is known worldwide, the entire country gets filled with tri-color these days. Thus, to celebrate, here’s a dessert depicting the colors of the Indian flag.

Honestly, being away from your birthplace and unable to visit for an extended period of time makes me homesick, and in situations like this, my nostalgia is strong. This is my tiny attempt to combine various ingredients and flavors to create a unique rich flavor reminiscent of Indian culture.

What is Tricolor Barfi?

Barfi is a type of Indian fudge made mostly for special occasions or festivals.

There are numerous methods for making barfi. However, the majority of them are sweetened with condensed milk and sugar.

For the tricolor barfi, the three layers are first created individually and then layered to form one. This dish is popular with both children and adults. Furthermore, it is a simple recipe. So, let us explore how to make this cuisine without further ado.

Ingredients At A Glance

Nuts – The nuts are the main ingredients of this dish. Make sure you choose the best quality nuts for it. You will need almonds, cashew nuts, and pistachios.

Cardamom powder – Cardamom powder adds an authentic Indian barfi aroma. Cardamom has a distinct spicy-sweet flavor that makes Indian desserts even more delightful.

Sugar – When you are making desserts, you can’t really skip the sugar, right? Balance the amount of sugar as per your preference.

Ghee – Use high-quality ghee (clarified butter) to boost the flavor of the barfi. Burris may get hard if you use neutral vegetable oil or unsalted butter.

Food color – This will add different colors to the barfi. You will need green and orange food colors.

Milk Powder – Milk powder is created when milk is dehydrated by evaporation. Milk powder is extremely convenient to store and has a long shelf life. Milk powder makes the barfi dry and retains its texture.

Saffron – Saffron adds a nice yellow color.

How To Prepare Tricolor Barfi?

Take a baking tray, place parchment paper, and grease it with ghee. Add hot water to the almonds, soak for 30 mins, and peel off the skin. Pat dry the almonds and keep them aside.

Now, separately grind the three varieties of nuts and set them aside. We will now make the three layers individually. Let’s start with the green layer.

Green Layer

For the green layer, take ½ cup ground pistachio and ½ cup ground almond and mix them well.

In a pan, take a cup of sugar and ¼ cup of water and heat it till it becomes a thick syrup. Add the pistachio and almond mix and stir.

Add two tablespoons of milk powder, ¼ teaspoon of cardamom powder, and one teaspoon of ghee and mix.

Then add two drops of green food color and keep mixing until it becomes thick.

Pour the mixture into the tray and spread evenly.

White Layer

For the White layer, take ½ cup cashew powder and 1/2 cup almond powder and mix them thoroughly.

Prepare the sugar syrup by mixing a cup of sugar and ¼ cup of water on low flame until it becomes a thick syrup. Add the cashew and almond mixture and stir thoroughly.

Add two tablespoons of milk powder, ¼ teaspoon of cardamom powder, and 1 teaspoon of ghee and mix. Keep mixing till it becomes thick.

Pour the mixture into the tray on top of the green layer and spread evenly.

Orange Layer

You will need a cup of ground almonds for the orange layer.

Take a cup of sugar and 1/4 cup of water in a pan and heat it till it becomes a thick syrup. Now add the ground almond to the syrup and stir in.

Add two tablespoons of milk powder, ¼ teaspoon of cardamom powder, and one teaspoon of ghee and mix.

Then add six drops of orange or a mix of 3 drops of red and three drops of yellow food coloring. Keep mixing till it becomes thick (one-string consistency).

Pour the mixture into the tray on top of the white layer and spread evenly. Cool completely.

Cut it into square shapes. Garnish it with chopped almonds and saffron threads. Your tricolor barfi is now ready to be served.

Some Expert Tips For Making Tricolor Barfi

  • You can utilize store-bought items such as almond flour if you want to save time; this recipe will turn out great with almond flour.
  • You can add tastes like rose water or kewada water to the cashew layer.

  • 2 drops Green food color
  • 6 drops Orange food color
  • 6 tablespoon milk powder
  • Saffron

Instructions

  1. Take a baking tray, place parchment paper and grease it with ghee.

  4. Grind the 3 types of nuts separately and keep aside.
  5. For the orange layer take a little under 1 cup ground almonds.
  6. For the White layer take ½ cup cashew and ½ cup almond and mix them thoroughly.
  7. For the green layer take ½ cup pistachio and ½ cup almond and mix them well.
  8. For the green layer, add 1 cup sugar and ¼ cup water in a pan and heat it till it becomes a thick syrup. Add the pistachio and almond mix and stir.
  9. Add 2 tablespoon milk powder, ¼ teaspoon cardamom powder and 1 teaspoon ghee and mix.
  10. Add 2 drops of green food color.
  11. Keep mixing till it becomes thick.
  12. Pour the mixture in the tray and spread evenly.
  13. For the white layer, add 1 cup sugar and ¼ cup water in a pan and heat it till it becomes a thick syrup.
  14. Add the cashew and almond mix and stir.
  15. Add 2 tablespoon milk powder, ¼ teaspoon cardamom powder and 1 teaspoon ghee and mix. Keep mixing till it becomes thick.
  16. Pour the mixture in the tray on top of the green layer and spread evenly.
  17. For the orange layer, add 1 cup sugar and ¼ cup water in a pan and heat it till it becomes a thick syrup.
  18. Add 1 cup ground almond and stir in.
  19. Add 2 tablespoon milk powder, ¼ teaspoon cardamom powder and 1 teaspoon ghee and mix.
  20. Add 6 drops of orange or a mix of 3 drops of red and 3 drops of yellow. Keep mixing till it becomes thick (one string consistency).
  21. Pour the mixture in the tray on top of the white layer and spread evenly.
  22. Cool completely.
  23. Cut it in square shapes.
  24. Top it with chopped almonds and saffron threads.
