DESCRIPTION

Vegetable Gold Coin is very tasty recipe and it is very easy to prepare it. It is super delicious and it is a very flavorful recipe.

INGREDIENTS

  • 2 potatoes boiled and mashed
  • ¼ cup onion finely chopped
  • ¼ cup carrot grated
  • ¼ cup finely chopped capsicum
  • ½ tsp grated ginger/ginger paste
  • 1 green chili finely chopped
  • 1 tbsp finely chopped coriander leaves
  • 1 tsp soy sauce
  • 1 tbsp tomato ketchup
  • 5 slices of bread
  • 1 tbsp flax seeds/sesame seeds
  • ½ cup all purpose flour/maida slurry
  • 1 tsp salt

INSTRUCTIONS

  1. Let us first prepare the flour slurry.
  2. In a mixing bowl take 2tbsp all purpose flour/maida, to it add 6tbsp of water, a pinch of salt and prepare a paste.
  3. The maida paste should not be too thick or too runny. If you feel it’s very thick add more water.
  4. Keep it aside.
  5. Now in a large mixing bowl add the boiled and mashed potatoes, grated carrot, finely chopped onion, finely chopped capsicum, green chillies, salt, soy sauce, grated ginger and coriander leaves.
  6. Mix well with your hands and make sure everything mixes well.
  7. Keep it aside.
  8. Using a round cookie cutter/glass cut the bread slices into round pieces.
  9. Apply tomato ketchup on the bread slices and spread the potato mixture evenly.
  10. Now coat the bread slices with the maida slurry.
  11. Sprinkle with some sesame seeds/flax seeds.
  12. The vegetable gold coins are now ready to fry or bake in the oven.
  13. I baked them in the oven at 180 degrees Celsius for 15 minutes.
  14. After 15 minutes the Vegetable Gold Coins are ready and can be served with tomato ketchup or any chutney of your choice.
