Ingredients
Chettinad Chicken Curry
- 800 gms (1.7 lbs.) Chicken
- 3 Onions – medium thinly sliced
- 3 Tomatoes – medium size cut into cubes
- Ginger-Garlic paste
- 15 to 20 Curry leaves
- 4 tbsp Oil (I have used coconut oil, you can use any oil of your choice)
- 1 tsp Turmeric Powder
- 1½ tsp Salt – (1 tsp to marinade the chicken and 1/2 tsp while cooking)
- 2 tbsp Lemon Juice
- Fresh coriander leaves – cup finely chopped
- 1 cup Water
Chettinad Masala
- 4 tbsp Coriander Seeds
- 6 to 7 Dry Red Chili
- 3 tsp Saunf/ Fennel Seeds
- 2 tsp Jeera/Cumin Seeds
- 1 inch Cinnamon Stick
- 10 to 15 Whole Pepper Corns
- 2/3 cup Fresh Coconut – grated
Instructions
- Let us first marinade the chicken with salt, lemon juice and turmeric for 1 hour or overnight for best results.
- Prepare the Chettinad masala.
- Heat a pan dry roast all the ingredients for the Chettinad masala, except coconut. Roast the masalas on low heat till it turns golden brown in colour. Then add the coconut Once it is golden brown in colour add the coconut and roast till it turns golden in colour. Cool completely.
- Now put all the roasted ingredients in a grinder and grind to a fine paste with the help of little water.
- Heat oil in a deep pan and sauté the onions till it turns transparent.
- Add ginger-garlic paste and fry for two minutes or till the raw smell of ginger-garlic goes away.
- Now add the curry leaves and the marinated chicken.
- Give it a good mix. Now add the tomatoes and mix well.
- Now cover and cook on low for about 5 minutes.
- Raise the heat to medium, add the Chettinad masala which we had prepared earlier. Mix well and cover and cook on low for 5 minutes
- Then add water, mix well and bring it to a boil and let it simmer for 10 minutes, till all the masala is incorporated well.
- Garnish with some fresh coriander and curry leaves and enjoy Chettinad Chicken with rice, roti or dosa.
