Ingredients

Soaking the fruits

  • 1 cup Orange juice
  • ½ cup Water
  • 1 cup Tutti frutti
  • ½ cup Raisins
  • ¼ cup Dried apricots
  • ¼ cup Dried cranberries
  • ½ cup Dates

Cake

  • 1½ cup Maida
  • ¼ cup Jaggery/Brown sugar
  • ¼ tsp Cinnamon powder
  • ¼ tsp Grated ginger
  • ½ tsp Lemon zest
  • 1½ tsp Baking powder
  • 2 Eggs
  • ½ cup Vegetable oil
  • 1 tsp Vanilla essence
  • 6 to 7 Almonds – chopped into half
  • 6 to 7 Walnuts – chopped into half
  • 7 to 8 Cashewnuts – chopped into half

Instructions

  1. In a saucepan add water, orange juice, tutti frutti, raisins, dried apricots, dried cranberries and dates.
  2. Cook this for 8 to 10 minutes on low heat till the dry fruits absorb all the juices.
  3. Keep it aside.
  4. Now let’s get started with the cake.
  5. Preheat the oven at 160 degrees Celsius.
  6. Now sieve the maida, baking powder and cinnamon powder and keep it aside.
  7. In a bowl crack the eggs, add oil and jaggery powder.
  8. Whisk them all together for 7 to 8 minutes with a spatula.
  9. Now add all the dry ingredients which we had sieved earlier i.e. maida, baking powder and cinnamon powder.
  10. Fold them in gently along with lemon zest, grated ginger and vanilla essence.
  11. Also fold in the soaked dry fruits.
  12. Add the chopped nuts as well at this stage.
  13. Grease a cake tin and transfer the cake mixture to it.
  14. Bake the cake at 160 degrees C for 45 to 50 minutes or till a skewer comes out clean.Christmas Fruit Cake Image
