Cream Cheese
Description
Make your own cream cheese at home.

Ingredients
- 2 cups Milk – full fat milk
- 2 cups Fresh Cream
- 4 tbsp Lemon Juice/Vinegar
- 1 pinch Salt
Instructions
- Take a pan and add milk, cream and salt.
- Now let this come to a boil, reduce the heat and let it simmer for a minute or two.
- Now add the lemon juice while stirring the milk continuously.
- The milk will curdle, now switch off the gas and keep it aside for 10 to 15 minutes.
- Strain the curdled milk through a muslin cloth. Do not throw away the liquid whey.
- Let the curdled milk cool.
- Put it in a blender or food processor and pulse it once for 30 seconds.
- If you feel that the mixture is too dry add some of the liquid whey.
- And pulse it once more till you reach your desired consistency.
- Your Cream Cheese is now ready for use.
- You can divide it into portions and add flavours of your choice like vanilla, oregano or any other dried herbs, mango or strawberry puree.
- You can store this Cream Cheese in an airtight container in the refrigerator for a week.
