Description

Dabeli a popular snack food of India. It is made with special dabeli masala and garlic chutney.

Ingredients

  1. 2 Pav/buns
  2. ½ cup Peanuts
  3. 4 Whole red chili
  4. 10 to 12 cloves Garlic
  5. 2 tbsp Tamarind/Imli pulp
  6.  2 tsp Jaggery powder (you can also use sugar)
  7. ½ tsp Salt
  8. 1 tsp Oil

Dabeli masala

  1. 3 tbsp Coriander seeds
  2. 1 tbsp Cumin seeds
  3. 8 to 10 Pepper corns
  4. 1tsp Fennel seeds
  5. 4 Kashmiri red chili powder
  6. 1 Star anise
  7. 1inch Cinnamon
  8. 4 Cloves
  9. 1 tbsp White sesame seeds
  10. 1 tsp Red chili powder
  11. 1 tsp Amchur powder
  12. 1 tsp Jaggery powder
  13. 1 tsp Rock Salt (you can also use table salt)
  14. 2tbsp Dry coconut powder (fresh grated coconut can also be used)
  15. 2 Bay leaves

For the filling

  1. 2 Potato – boiled
  2. 1 Onion – medium finely chopped
  3. ½ cup Fresh coriander
  4. ½ cup Sev

Instructions

Garlic Chutney:

  1. Dry roast the peanuts in a kadai for 3 to 4 minutes and remove it. Let it cool.
  2. Now in the same kadai add oil and heat it.
  3. Add the garlic cloves, red chili and fry till the raw smell of garlic goes.
  4. Now put them all in a blender along with salt and tamarind pulp.
  5. Grind it coarsely.
  6. Garlic chutney is ready. Keep it aside.

Dabeli Masala:

  1. Heat a kadai add 1tsp oil.
  2. Now add red chili, star anise, cinnamon, cloves, bay leaves, pepper corns, fennel seeds, cumin seeds, and coriander seeds.
  3. Sauté them on medium heat for 2 to 3 minutes or till they change colour.
  4. Now add the dry coconut and sauté for a minute or two.
  5. Let it cool.
  6. In a blender add all the roasted masala, along with sesame seeds, Kashmiri red chili powder, jaggery, salt and amchur powder.
  7. Now let us prepare the filling.
  8. Mash the boiled potatoes, to it add dabeli masala and fresh coriander.
  9. Mix it all well.
  10. Now let us prepare the dabeli.
  11. Cut the buns from the center into two halves.
  12. Put the potato filling.
  13. Now put the garlic chutney and chopped onions.
  14. Cover with the other half.
  15. Apply sev on the sides and your dabeli is ready to serve.
