Lettuce Wraps (no carb, gluten-free)
Description
This restaurant fav is so easy to make at home with a few ingredients. Crunchy peanuts, sweet and spicy chicken wrapped in fresh lettuce.

Ingredients
- 1 lb Chicken Breast (or thighs, fat trimmed)
- 2 tbsp Thai Red Curry Paste
- 1 tsp Ginger
- 1 tsp Garlic
- 1/2 cup Green Onions -chopped
- 1/2 cup Green Bell Peppers – chopped
- 1 tbsp Hoisin Sauce
- 1.5 tbsp Crunchy Peanut Butter (or 2 tbsp crushed peanuts)
- 8–9 Romaine Lettuce or Butter Lettuce or Iceberg lettuce
Instructions
- Cut chicken into small cubed pieces and saute 1-2 minutes
- Add red curry paste+ginger + garlic
- Mix well
- Add green onions
- Add green bell peppers
- Add hoisin sauce
- Add peanut butter
- Mix well
- Place in lettuce
- Enjoy!
