Description

Omelette Curry is a simple and quick Indian recipe made of chunks of omelette soaked in onion-tomato gravy. It goes well with rice or paratha.

Ingredients

Omelette

  • 2 Eggs
  • 1 Onion – small, finely chopped
  • 1 Green chilly – finely chopped
  • 1 tbsp Oil

Gravy

  • 1 Onion – small
  • 1 Tomato – small
  • 1 tsp Ginger-Garlic Paste
  • ½ tsp Coriander Powder
  • ½ tsp Turmeric Powder
  • ½ tsp Chilli Powder
  • 1 tbsp Fresh Green Coriander – finely chopped
  • ¼ tsp Garam Masala
  • ¼ tsp Salt
  • 1 tbsp Oil

Instructions

  1. Beat the eggs along with chopped onions, tomato and green chilli. Heat a pan, add oil and make an omelette. Keep it aside.
  2. Now let’s make the gravy for the omelette curry. In a grinder, add onion, tomatoes and ginger-garlic paste. Make a smooth paste. Heat oil in a pan and add the ground masala.
  3. Fry the masala for 2 minutes and add all the dry masalas like salt, turmeric powder, coriander powder, and chilli powder and fry this mixture till the masala starts leaving the sides of the pan and oil separates.
  4. Now add water and give it a nice boil.
  5. Cut the omelette into 2 pieces and add to the gravy.
  6. Cover the pan and cook for 3 to 4 minutes.
  7. Add the garam masala at this stage. Switch off the gas and garnish with green coriander leaves before serving.
  8. Serve with roti, parantha or rice.Omelette Curry Image
