Description
Paneer bhurji is such a tasty dish that is so fast to make! Adding the veggies gives it an extra dose of healthy. Use tofu for a vegan way to cook this.

Ingredients
- 200 gms (about 1/2 lb) Paneer/Cottage cheese/tofu
- 1 Onion – medium, size finely chopped
- 2 Tomato – finely chopped
- 2 Green Chillies – finely chopped
- 1 Bell peppers – small, finely chopped
- ½ cup Carrots – finely chopped
- ½ cup Green peas
- Fresh green coriander
- 1 tsp Garam masala
- ½ tsp Turmeric powder
- 1 tsp Chilli powder (optional, since I have used green chillies I did not use chilli powder)
- 1 tsp Salt
- 2 tbsp Oil
- ¼ cup Water
Instructions
- Heat oil in a pan. Add onions and saute for 2 minutes on low heat, add the green chilies and tomatoes. Cook for 3 to 4 minutes.
- Add salt, turmeric and garam masala. If you feel the masala is sticking to the pan add 1/4cup water.
- Now cook for 2 more minutes and add the vegetables- green peas and carrots.
- Don’t add the bell peppers now as we don’t want them over cooked. Mix well, cover and cook for 3 to 4 minutes.
- Now add the bell peppers and mix everything on high heat and then add the grated paneer. Reduce the heat.
- Give it a good mix. Cover n cook for 2 minutes. Remove the cover and add fresh coriander leaves.
- Serve hot with parantha, naan or roti.
