Description
Pav Bhaji as the name suggests has pav i.e. bread and bhaji which is cooked vegetables in spices, onions and tomatoes.
You can use any vegetables of your choice. I have included beets here as beets is a vegetable that is good to eat during your time of month. The change in hormone during the monthly cycle can cause cramps due to hormonal changes. Beets has high dose of Vitamin A that helps liver process estrogen and help relieve cramps.

Ingredients
- 4 to 5 Potato – medium size potatoes boiled and peeled
- 1 Beetroot – boiled and peeled
- 1 Carrot – boiled and peeled
- 1 Capsicum – small chopped fine
- 1 Onion – medium size chopped fine
- 2 Tomatoes – medium size chopped fine
- ½ cup Fresh Coriander – chopped
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Red Chili Powder
- 1 tsp Turmeric Powder
- 1 tsp Coriander/Dhania Powder
- 1 tbsp Pav Bhaji Masala (I have used Catch Pav Bhaji masala, you can use MDH or Everest all are equally good)
- 2 tsp Oil (I have used olive oil you can use any oil of your choice)
Instructions
- In a bowl add all the boiled vegetables like potato, carrots and beetroot.Mash them up and keep aside
- Heat oil and fry onions for a minute.
- Once the onions become transparent add the tomatoes and cook for 2 to 3 minutes.
- Add the ginger-garlic paste, salt, turmeric powder, red chili powder and coriander powder and mix well.
- Cook for 3 to 4 minutes on low heat or till the water from the tomatoes evaporate.
- Now add the pav bhaji masala and mix well.
- If you feel that the masala is sticking to the pan add half of the water which we had saved up after boiling the vegetables.
- Give it a good stir and let it cook on low heat for 3 minutes now add the capsicum and mix well.
- Add rest of the water and bring it to a boil. Add the boiled vegetables.
- Cook it for a minute or so. Enjoy!
- Cut the pav (bread) horizontally from the center into two halves and toast on a pan or tawa.
Notes
Pressure cook the vegetables with a cup of water. Close the lid, after one whistle reduce the flame and cook on slow flame for at least 7 to 8 minutes. Let all the pressure from the pressure cooker release then only open it.
