- 4 Plantain – skinned and cut into 1cm cubes
- 2 Potato – skinned and cut into 1 cm cubes
- 2 Tomato – cut into cubes
- 1 tsp Jeera/ Cumin Seeds
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder
- 1 tsp Jeera/Cumin Powder
- ¼ tsp Bengali Garam Masala – cardamom, cloves, and cinnamon all in equal proportion and ground to a fine powder
- 1 tsp Salt
- 2 tbsp Mustard Oil (you can use any oil of your choice)
- 1 cup Water
Instructions
- Heat some oil in a wok, add jeera seeds, let it splutter.
- Now add the tomatoes stir, add turmeric powder, jeera powder mix well, and then add chili powder and salt fry them on low heat.
- Add sprinkling of water to avoid the masala sticking to the pan
- Mix it all well and cook for 2 to 3 minutes.
- Add the potatoes and plantains mix it well with the masala, cover and cook for 5 to 6 minutes on low.
- Add some more water, let it simmer, cover and cook for some more time approximately 4 to 5 minutes.
- Remove the lid and add garam masala.
- Let it simmer for a minute or two.
- Serve hot with steamed rice or roti.
