The recipe yields enough for 2 to 3 main course salads; add some store-bought crispy spring rolls on the side to stretch it. That’s it, you are good to go – healthy, light, and full filling.

Chicken – Chicken, preferably the breast piece, so that shredding the chicken is easier. There are different ways to shred a chicken you can shred it using two forks, or the easiest would be to break up the cooked chicken breasts into chunks (you can do this with your hands) and set them in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-low until all of the chicken breast bits are crushed.


Vegetables – You can add any veggie of choice to this salad or any vegetable that is already present in your pantry. I have used onions, boiled corn kernels (fresh, canned, or frozen), yellow bell pepper, red bell pepper, and green bell pepper.




Garlic – Garlic adds to the aroma of the salad.


Salad Dressing – For the dressing, I have used oregano, chili flakes (adjust the quantity as per your heat tolerance), teriyaki sauce (store bought), and pesto sauce (store bought).






How To Prepare Shredded Chicken Salad?


First, heat the oil in a Kadai to it, add the garlic and sauté for 2 minutes, or until golden brown in color and the raw garlic smell is gone.


Then add the onions and sauté for 2 to 3 minutes. Followed by which add the salt and chili flakes. After sauteing for a minute, add in all the vegetables and mix them properly on medium flame.


Add the chicken, oregano, pesto sauce, and teriyaki sauce after that. Sauté for 3 to 4 minutes on low heat.


Examine the seasoning, and if necessary, season with salt. Your shredded chicken salad is now ready to serve. You can serve it with your favorite bread or eat it on its own.

Chicken salad can be made in a variety of ways. Today I am sharing a very easy and simple chicken salad recipe which is tasty, healthy and very easy to prepare.



  • 1 cup Chicken – boiled and shredded
  • 1 Onion – finely chopped
  • ½ cup Corn Kernels – boiled if fresh otherwise canned or frozen
  • 1 Yellow Bell Pepper – small finely chopped
  • 1 Red Bell Pepper – small finely chopped
  • 1 Green Bell Pepper – small finely chopped
  • 67 Garlic – cloves finely chopped
  • 1 tsp Oregano
  • 1 tbsp Chili flakes (you can reduce the quantity if you want to)
  • 1 tbsp Teriyaki sauce (store bought)
  • 1 tsp Pesto sauce (store bought)
  • ½ tsp Salt


  1. Heat a kadai add 1tsp oil. Add garlic sauté for 2 minutes till golden brown in colour or till the raw smell of garlic goes.
  2. Add onions sauté for 2 to 3 minutes.
  3. Add salt and chili flakes. Saute for a minute.
  4. Now add corn kernels, red bell pepper, green bell pepper and yellow bell pepper.
  5. Mix all the vegetables properly on medium flame and add chicken, oregano, pesto sauce and teriyaki sauce.
  6. Sauté them for 3 to 4 minutes on low flame. Check the seasoning. Add salt if required.
  7. Shredded chicken salad is now ready to serve.
  8. You can serve it with any bread of your choice or enjoy it as it is.

if you use fresh corn, you will need to boil it till it’s cooked and soft.
