Watermelon Tofu SalaD is a refreshing hydrating salad- so wonderfully light, juicy and delicious. Good for weight loss.
- ½ medium size – Watermelon diced (approximately 400gms)
- 100 gms – Tofu diced or diced feta cheese.
- 1/2 a medium onion – sliced
- 1 tsp – Oregano
- 7 to 8 – Basil or mint leaves chopped
- A small amount chopped parsley or coriander leaves ( optional)
- ½ tsp – Pepper powder
- 1 tsp – Lime juice
- 1 tsp – Salt
- In a large mixing bowl add the ingredients and toss well.
